Bisphenol A (BPA) is a polymeric coating found in many food-safe storage containers. BPA is used to prevent food acids from corroding the tin can.

As a consequence, the BPA barrier between the can and the food keeps the metal from leaching into the food and keeps the metal from corroding.

When baking a cake in a pan, you should avoid using BPA-lined cans since BPA can leach into the cake. The heat from baking with a BPA-lined can can melt the chemical and leak into your cake. If you want to bake with them, use food-grade cans.
